I literally don’t want to see chili for at least a month. The past 24 hours have included more chili than I’ve ever encountered. But after tomorrow night, I seriously doubt I’ll have a craving for chili anytime soon.
Sorry for that rant.
This past Friday night we had a low-key night at home and dinner was fantastic. The flavors were so unique in the curried chicken thighs with pomegranate-mint sauce. I’m a huge fan of chicken thighs. The darker meat has so much flavor and it’s incredibly hard to dry out chicken thighs. But I absolutely think you could make this with chicken breasts if you’re anti-thighs. Madras curry has a little bit of heat but everything is cooled down with fresh mint and Greek yogurt. Oh, and the little pops of pom seeds are full of refreshing flavor and texture.
I served our chicken thighs with a side of steamed broccoli. Super simple but super elegant. I always want Friday nights to feel a little special since it’s the start of the weekend but special doesn’t have to mean expensive or super difficult to make. Twenty minutes, a few ingredients and dinner was ready to be enjoyed.
