Good morning, friends! I hope you all had a weekend full of sunshine and smiles and are ready to tackle the new week that lies ahead. We had an awesome, low-key weekend which is just what the doctor ordered. The rest of this month is cray-cray and August weekends are filling up fast.
This salad is the PERFECT summer salad. I was inspired by a Cooking Light salad but switched up a few of the ingredients to match what I had on hand and what’s in season.
This salad is incredibly easy to throw together and it involves zero cooking. That’s right, ZERO cooking. No need to turn on the stove or heat up the oven on a hot, hot day.
On top of the pile of greens we have the following ingredients:
Juicy, ripe tomatoes
Sweet plum slices
Nutty pecan pieces
Savory prosciutto slices
The whole salad was then drizzled with a salad dressing that I made. To make the dressing, simple whisk together 1 tablespoon of EVOO, 2 tablespoons red wine vinegar (I’m a huge fan of vinegar – if you’re not, switch the amounts of EVOO vs. vinegar), salt and pepper. Super simple!
And that’s it…dinner is served!
