Happy July 1st! And most importantly, happy Friday! It’s a long weekend around here and I couldn’t be more excited. We have fun Saturday plans with friends and then we have a few days that will be family-filled. Hopefully we’ll see a few fireworks, enjoy a glass or two of wine and devour a hotdog or hamburger.
Here are my favorites from the week!
Favorite Cookout: Crispy Bacon Pasta Salad with Fresh Herbs. I would like to have a big helping of this summer salad next to my hamburger or hotdog for our 4th of July celebration. Bacon.
Favorite Appy Hour: Grilled Grape Tomato Crostini with Honeyed Whipped Feta. Carbs + Cheese will forever and always be on the top of the list of my favorite appetizers. But let’s take it up a notch and add in-season grilled tomatoes.
Favorite Drool: Fudge Brownie Mudslide Ice Cream Cake. Since we’re on the topic of menu planning, here’s an epic dessert I would absolutely devour.
Favorite Relaxed: Pineapple Tee + Gingham Shorts + Gold Sandals. After a day in the sun, this adorable yet comfortable outfit would be perfection. Well, after showering off all the SPF.
Favorite Ingredients: Honey Garlic Shrimp in Coconut Milk. Fresh, local shrimp. Sweet, floral honey. Lots of flavorful garlic and ginger. Sweet and creamy coconut milk. Herbaceous homegrown basil. Fried plantains. Dreamy avocado.
Favorite Southern: Fried Chicken BLT with Jalapeño Honey. I had to take moment of silence when I came across this recipe. Holy cow. I want this for Sunday Brunch.
Favorite DIY: Citronella and Eucalyptus Candle. Perfect for the long summer nights we’ve been spending out on the deck.
Favorite Rainy Sunday: Sweet Potato Curly Fries with Yogurt, Sriracha and Cilantro. Don’t get me wrong – I adore summer and sunshine and everything along with it (except flies and other annoying creatures). But I don’t hate a rainy Sunday every once in a while where I can snuggle up with a movie (and a platter of fries).
Favorite Muddled: Ginger-Mint Watermelon Mojitos. So Big Guy planted watermelons this year. And if we actually harvest a watermelon, I’m totally doing this with it.
