And just like that, it’s Monday again.
This past weekend was filled with delicious food, too much driving, wonderful quality time with the WHOLE family and a birthday party.
It was fantastic.
Big Guy and I kicked off the weekend with a date night out on Friday night. We returned to one of our favorite small-town gems, On The Square in Tarboro. It’s been several months since we had eaten at On The Square and I swear the food has gotten better.
I’m rather predictable and started with a glass of bubbles. We were starving so we ordered fried calamari (so good!) and split a grilled romaine salad.
I definitely ordered the best meal of the night – mushroom risotto. Don’t get me wrong, Big Guy’s scallops were awesome but the risotto was incredible. My favorite part – crispy sweet potato shoestrings topped off the huge bowl along with a soy glaze that was so unexpected.
We were up and at ’em early on Saturday morning so that we could hit the road to celebrate Deacon and visit family.
We arrived in Charlotte around lunchtime and immediately found food thanks to my youngest brothers love of eating.
Logan has been talking about Viva Chicken for a while now and we finally got to see what he was raving about. The restaurant is by no means fancy – but the food was fantastic. Viva Chicken is a Peruvian inspired restaurant and there are three locations in the Charlotte area.
We split an order of the Quinoa Stuffed Avocado: Organic Quinoa, Rocoto Mayo, House Balsamic.
And for lunch, I ordered the Viva Chicken Salad: Romaine, Kale, Pulled Rotisserie Chicken, Cucumbers, Onions, Tomato, Feta Cheese, Avocado, House Dressing.
Saturday afternoon was spent hanging out with my sister and her family along with Logan. Between party prepping, we enjoyed some killer ribeyes and a few glasses of wine.
Oh, and lots of laughter.
Sunday was spent with the whole family celebrating baby boy Deacon.
I cannot believe that he is one year old. The past year has flown.
My heart was so full yesterday and I’m fairly certain that’s the only thing that got through my almost 4-hour solo drive home. Woof.
