Quick Chicken Curry

After a slow, long weekend, I was snapped back into reality really quick with a three-day intense leadership training this week.  Needless to say, after the long days of sitting (and using my brain way too much), I wanted comfort as soon as I walked in the door at the end of the day.

After a quick change into comfy clothes (don’t act like you’re not guilty), it was straight to the kitchen to prepare dinner.

Chicken Curry was not only quick but it was incredibly comforting.  The dish comes together in flash thanks to stir-frying and a making sure all your ingredients are prepped before you start cooking.

I had to cook the rice but you could shave off even more time by buying pre-cooked rice (no shame in that game).

The tender stayed so tender while the ginger and curry added warmth that I swear warmed my soul and the addition of coconut milk added a dimension of richness.  The dish was saucy and satisfying and the perfect ending to a long day.

Especially with a DVRed episode of Nashville on the side.
