Just because the weather is getting warmer doesn’t mean I won’t crave a comforting dinner. Polenta, or grits, is one thing that always makes me feel warm and cozy. It’s creamy and warm and with a little bit of Parmesan mixed in it’s the perfect bed for a vegetarian mushroom dinner.
What I loved best about this dinner was the texture. Or should I say the variety of textures (and flavors!).
Tender, almost nutty chickpeas.
Sharp, salty Parmesan.
Tangy red onion.
Tender, meaty mushrooms.
Incredibly fresh parsley.
Warm and comforting.
Sometimes you need that – no matter the season.
