Nothing is more comforting than a big pot of chili, especially on a Sunday evening. And while I love an All-American chili full of beef, sometimes I like to change things up. How does BBQ Chicken Chili sound to you? The recipe is from my new favorite cookbook, Seriously Delish, and I think it could become your new favorite chili recipe.
The chili starts by sauteing onions, garlic and diced jalapeno until softened. The base of the chili is a seasoning mix of chili powder, smoked paprika, cumin and a pinch of red pepper flakes. Once the spices are brought back to life, shredded rotisserie chicken, diced tomatoes, beans and BBQ sauce are added and simmered until all the flavors come together.
Your kitchen will smell amazing – one of the best parts of a large pot of chili!
Once simmered, the chili is topped with cheddar cheese and cilantro. And a cold beer on the side.

This pot of chili will serve a crowd (and could easily be doubled) and would be perfect for a tailgate or just watching football at home.
