Kale Caesar Quinoa Salad with Roasted Chicken

Last night I needed some greens in my life.

Because it’s all about balance.

This salad came together in a flash and is loaded with protein.

Also in the mix:  superfoods.

Olive oil

And instead of croutons, the salad is topped with heart-healthy walnuts for a little crunch.

I used a rotisserie chicken from Harris Teeter and the only substitution I made was using baby kale instead of Lacinato kale.

A bowl full of goodness and greens.

Just what my body was craving.
