Marinated chickpeas are the perfect addition to any salad. Particularly a salad I pack for lunch. I made the chickpeas (and by made, I mean threw all the ingredients in a bowl) on Sunday so that I could add them to my greens for lunch throughout the week.
The chickpeas are a mixture of chickpeas (duh!), fresh herbs (lots of parsley and some rosemary), feta cheese, chopped olives, lemon juice, olive oil and garlic. This would also be the perfect addition to any picnic (you could leave out the feta so that you wouldn’t have to worry about it sitting out too long).
On this particular day, I served the chickpeas over simple mixed greens with some red bell pepper strips on the side and a hard boiled egg for extra protein and healthy fat.
Having items like this on hand makes it easy to eat healthy during the week. Plus, the chickpeas only got better the longer they marinated.
