Wafflewiches are way more fun than boring sandwiches.
I knew I needed a simple dinner last night. Big Guy was getting back into town but he needed to spend some quality time with the yard. So wafflewiches were on the menu. I was inspired by a waffle sandwich in an old Cooking Light magazine.
The wafflewich is really simple, y’all! Crispy center cut bacon, ripe heirloom tomato, lettuce, Trader Joes gluten-free frozen waffles (the best!) and jazzed up mayo.
The mayo is jazzed up with apple cider vinegar, a pinch of sugar, garlic powder and freshly ground black pepper.
The waffle gave the sandwich so much crunch and an added sweetness that reminded me of brunch.
This tomato was amazing. Another reason I love Spring and Summer – the produce! And you can’t really go wrong with bacon.
Sure, I love spending evenings in the kitchen making elaborate dinners. But sometimes simple is all you need.
And sometimes it’s all you really want.
