The #greensmoothieapril challenge is going strong! I’ve loved knowing that one meal a day will be a healthy green smoothie – full of protein, healthy fats and some added nutrients from spinach. I’ve also gotten creative with my smoothie recipes. I used a Cooking Light smoothie recipe as my guide to create a Piña Colada inspired smoothie.
In the mix:
1/4 cup light coconut milk
1/4 cup pineapple juice
1/2 cup unsweetened almond milk
1/2 banana, frozen
1 cup pineapple chunks
1 scoop vanilla protein powder
1/2 cup ice
Blend and serve. Umbrella optional.
I’ve also played around with the amounts of the ingredients – using more banana and less pineapple.
I almost thought I was on vacation while sipping this green smoothie.
