Coconut-Curry Chicken Soup

The comfort of chicken soup – Thai style!

During my hunt for a Sunday night dinner, I saw that this particular recipe had a 5-star (outstanding) rating with over 100 reviews.  That pretty much convinced me that I must make this chicken soup.

It’s traditional in that it includes chicken, chicken broth and noodles.

But it’s also very nontraditional with coconut milk, curry, red curry paste, cilantro and fish sauce.

But nontraditional isn’t always a bad thing.

Sometimes it’s a very, very good thing.

Like this bowl of soup.

And just like chicken soup, this soup warmed my soul and filled my belly.

A squeeze of lime juice on top brightened the soup while the coconut milk made it much creamier than your traditional version.

A little spicy, a little rich and a whole lot of delicious.

**by the way, Harris Teeter had rotisserie chicken on sale for $4.99 yesterday.  not only did i make this recipe which provided lots of soup leftovers, but there’s half of the chicken left.  talk about a deal.**
