When you need dinner ready in a hurry, shrimp is a great protein choice. There are so many delicious shrimp recipes available that take less than 30 minutes. This meal took about 20 minutes and was on the table faster than any take-out around. Plus, you control the ingredients so it’s much more figure friendly.
As with all stir-fry dishes, I suggest making sure all your ingredients are prepped before you start cooking (minus the rice – start cooking that first). The dinner comes together quite quickly once you start cooking.
The caramel sauce is a mixture of chicken broth, sugar and fish sauce which is thickened with cornstarch and water.
The recipe calls for 2 teaspoons of black pepper (which is a lot), so if you’re sensitive to pepper, cut down the amount to 1 teaspoon. I went with 1 1/2 teaspoons and I still drank a lot of water with dinner.
The rice mellows the dish out and catches all the delicious sauce.
A perfect weeknight meal.
