Pimiento Cheese Cookies

These cookies were made for Big Guy.

Sweet.

Salty.

Buttery.

And pimiento cheese is involved.

Big Guy even got involved.  Yep, he helped me bake cookies last Friday night.

And like I said on Instagram, he most definitely wasn’t baking cookies the Friday before Homecoming 1o years ago.

My, how times change.

These will probably be my “cookie of the year” for the holiday season.

So unique.

They do involve a little bit of work despite only having 5 ingredients.  The most important ingredient:  pimiento cheese.  Palmetto Cheese is the best ever.  According to the Bell family and Big Guy.

To get these cookies started, process 1 cup of pimiento cheese in your food processor until smooth.  Then add the cheese and flour to a bowl and beat until combined.

Add your finely chopped pecans and butter and mix until combined.  Wrap the dough in plastic wrap and refrigerate for 2 hours.

The dough is then rolled out super thin and cut into small circles.  I used a champagne flute as my cookie cutter.

So appropriate.

Drop a small spoonful of jam into the center of a cookie and top with another cookie.  Crimp the edges to seal.  Bake at 400 degrees until golden brown.
