This salad might just be the prettiest little thing to come out of my kitchen all summer.
Tomato, Sweet Onion and Parsley salad would pair well with just about any protein. Ours went with lamb chops that were seasoned with cumin, cinnamon, salt, pepper and brown sugar.
The salad is simply tomatoes, sweet onions and parsley (duh!) with a simple dressing of EVOO, orange champagne vinegar (from Trader Joes), salt and pepper. We have an abundance of parsley so I was so excited to use the herb as a main ingredients in this salad. However, I think any herb would be delicious in the mix. The original recipe called for the addition of feta, but I left that out since we had goat cheese stuffed okra as an appetizer.
So simple but such a summer salad.
