Sausage and Polenta Breakfast Casserole

The trick to enjoying a Sunday morning is to prep your breakfast the night before.  Then on Sunday morning (or any other morning) you simply pre-heat the oven and breakfast is ready in about 30 minutes.

By the way, polenta is also known as grits.  And I love grits.  Being the Southern girl that I am, grits should be enjoyed in a savory dish.  Add cheese, bacon or salt.  Please don’t add fruit, syrup or sugar.

In the Sausage and Polenta Breakfast Casserole, grits are mixed with two types of cheese, chicken andouille sausage, green onions, garlic and some hot sauce for a delicious dish that’s good enough for breakfast, lunch or dinner!  (Just to note – I used 1 cup of sliced green onions – I thought 2 cups sounded like a little much.)

This casserole isn’t quite as decadent as my Mawmaw’s grits casserole that she makes every Christmas morning but it’s still delicious (and more figure-friendly)!
