This week has been a go-go-go kind of week! And it’s only Thursday. I seriously think that being gone for the weekend started the feeling of go-go-go and it just hasn’t stopped. Like I mentioned, we were in Charlotte this past weekend. I went to celebrate my sister’s birthday and to have a dress fitting and on Sunday we met with the Preacher that will marry us. Needless to say, there was no room to squeeze in a Superbowl Party. (We’re more of a college football kind of couple so it wasn’t that big of a deal.) Despite not having a Superbowl Party, we managed to fit in a very football-ish dinner. Our favorite: pizza!!!!
We used a pre-made crust(s) to make life easier since we know we’d be getting home at dinner time. On the menu – Spicy Sausage and Mushroom Pizza.
The ingredient list is rather simple: pizza crust (we used gluten-free), hot Italian turkey sausage, onion, mushrooms, pizza sauce, mozzarella cheese and Parmesan cheese. The recipe called for bell pepper but I serve raw bell pepper slices on the side so we didn’t weigh down the pizza. It was the perfect cruncher on the side.
You simple brown the sausage and then add in the onion and mushrooms and saute until softened. Add a layer of sauce to the pizza crusts followed by the sausage mixture and then top with cheese. Bake and devour!
Bring on the weekend!!!!
