Did you miss me yesterday? I apologize for not posting – this week is a crazy one – but I promise I’ll be around the blog with new posts the rest of the week. Here’s a sneak-peek at life lately via the Instagram lens.
Last week something happened that never happens. Big Guy and I went on a mid-week date to Wasabi 88 in Greenville. I love that I’ve turned Big Guy into a sushi lover (granted, we’ll never love the same rolls). Turns out Wednesday night is buy one roll, get one free. I ordered the Miami Roll (Tuna and Cucumber topped with spicy Crab, Avocado, Fire Cracker sauce, and Seafood sauce) and the Paradise Roll (Spicy Tuna, Cucumber, Cream Cheese, and Tempura Flakes topped with Spicy Crab then baked). The Miami roll was definitely my favorite of the two and I finished every single piece.
On Friday afternoon, I rushed home after work to get busy in the kitchen. I had several recipes I needed to pull together until it was time to head to dinner with some friends. I was so excited to cream together butter, cream cheese and sugar for Pumpkin Streusel Muffins. The muffins turned out gorgeous and I could not wait to share them….
All that creaming and mixing and baking was pointless. I woke up at 4 am on Saturday morning and exclaimed “I forgot the pumpkin.” Needless to say, I was up for the day. With coffee brewing and Big Guy secretly happy (he loves game days – no matter what time they start) at 4 am, I started baking more pumpkin muffins. While I wish to say that my pumpkin muffin worries were over, they weren’t. While these tasted delicious they were so ugly (the cream cheese became to thin). Thankfully no one judged me or my muffins at the tailgate.
Things finally started looking bright once we got the tailgate up and “running.” I mean, how could a morning filled with champagne not be amazing?

By the way, I’m famous. During the game, I looked at my phone and I had loads of text messages. Apparently the cameras caught me and Big Guy and we made it on t.v.
Following our win, we headed home, showered off and I got to work on some homemade hot wings. And a glass of champs was totally necessary. The wings turned out AMAZING!!!! I cut down on the amount of cayenne pepper that the recipe called for and I added a few chives on top to make the dish pretty. But other than that – this recipe is a keeper. I also whipped up another appetizer: Roasted Cauliflower and Aged Cheddar Dip. I prepped the dip the night before and simply popped it in the oven when we got home from the game. If you think you don’t like cauliflower, you’re wrong.
Homemade almond butter! Thanks for nothing Trader Joe’s (well, thank you for the almonds). It takes about 10 minutes to go from whole almonds to almond butter. I mixed in some sea salt and vanilla bean. Amazing.
And then yesterday happened. I needed a pick-me-up around 1pm. I knew it was necessary since I had a 12 hour workday. And I’ve had several people ask about my nail polish color – it’s shellac, so unfortunately I don’t know what to tell you - but it is the perfect fall color.
