I had my heart set on Crisp Lamb Lettuce Wraps. I had seen lamb in Harris Teeter a few weeks ago and jumped for joy at something so “fancy” in our town. And then there was a lamb fail. Harris Teeter was out of lamb. Some might say, go to a different store. That different store that might have lamb is at least an hour away. So I went back and forth beef or pork, beef or pork. And then my eyes landed on bison. Bison for the win!
Basically I made the wraps just as the recipe stated but used ground bison instead of lamb. The lamb would have been delicious but the bison was absolutely incredible. The addition of cinnamon was a brilliant idea. So many flavors!!! Bright cucumber, fresh parsley, creamy hummus dressing. This meal was out of control!
And I can’t lie – I had an additional wrap once these two were demolished. Things got a little messy but I cannot describe how full of flavor these were. I think that’s all Big Guy and I talked about while eating – what we were eating.
Bison for the win.
