Let me share last night’s dinner and then we’ll get straight to this week’s Friday Favorites. For dinner last night, I chopped up a few of the leftover chicken thighs and made Tostadas with Avocado and Salsa. I couldn’t find any avocado on Sunday so we went without – they were still delicious. And instead of queso fresco I used feta (a great substitute, in my opinion). And in the salsa, I barely used any oil – just didn’t think it was necessary. I piled a few jalapenos on my post-pic which set my mouth on fire. I love quick and easy recipes that utilize leftovers – I hate throwing away food!
Lately I’ve been using salad plates for my dinner plate – it makes me feel like I’m eating more (just a tip).

Favorite Salad Combo: Spinach, quinoa, grapes, walnuts, and blue cheese (I’d prefer goat cheese).
Favorite Organization Idea for the kitchen: All the usual suspects within arms reach.
Favorite Sweet ‘n Savory Bite: Chocolate Caramel Potato Chips. Shut.the.front.door.
Favorite Party Idea: “The Very Hungry Caterpillar” was (and is) one of my favorite children’s books.
