Big Guy outdid himself. I was away this past weekend (more on that Wednesday) and knew that I wouldn’t be home until later Sunday afternoon. Instead of rushing around like a mad woman – I put Big Guy in charge of Sunday dinner. I really have no idea what I expected him to make for dinner – though I did know that BQ or Smokey would be involved.
When I first walked in, I was greeted by canned goodness…
Someone was productive! Fresh salsa from the garden and pickled jalapenos.
And for dinner…it’s pretty epic. Big Guy “titled” it “A Taste of Summer.” It was honestly such a treat to come home from a busy weekend and a day of driving and not have to worry about dinner.
Grilled chicken thighs with homemade pesto. The pesto was so flavorful! Made with homegrown basil, lots of garlic, olive oil and pine nuts. Big Guy is also a huge fan of the food processor now.
Watermelon, mint and feta salad. Such a beautiful combination. Salty and sweet. Instead of using a lot of oil, the watermelon and mint was tossed with the juice from two limes.
Zucchini, Squash and Onions. This was the only dish I really helped with – and I simply did the chopping and throwing into a skillet. Simple but so delicious.
But he didn’t stop there. Remember how I said I wanted homemade ice cream before summer was over? Well, Big Guy delivered. Homemade Peach Ice Cream.
This literally was a taste of summer. So fresh, light and healthy with a little splurge at the end. A perfect end to a wonderful, wonderful weekend.
