Confession: Big Guy and I are still following the original “Sixteen and Pregnant” gals. We just can’t help ourselves. And we’re super-duper sad this is the “final” season. Instead of pizza and a movie, it was pizza and Teen Mom around here. Full of, “omg” and “are you serious?” moments, as usual.
With mindless television, we ate an amazing pizza! Pizza was a no-brainer since we had a lot to get done on Sunday afternoon/evening. Grocery shopping, mowing the grass (Big Guy, not me), prepping corn and dolphin (mahi) for the freezer and laundry. Lots of laundry. I used the extra crust that I made last Sunday to whip up a pizza that was inspired by this recipe.
I made a few changes…I didn’t use the whole can of artichokes because I was afraid the crust would get too soggy. I also didn’t use any ricotta BUT I did make an addition. A very delicious addition. Pesto! I put a very thin layer of pesto on the crust before piling on the toppings.
The spinach and artichokes paired perfectly with the pesto. So much flavor in each and every bite. The artichokes added a saltiness along with the Parmesan and the mozzarella melted so perfectly. Absolutely delicious. This may be in the top 10 pizzas that have come out of our kitchen.
