It’s no surprise that we love pizza. And this pizza is no exception. I follow Jessica’s blog How Sweet It Is and I’m usually drooling over bacon or chocolate or bacon and chocolate together. I usually want to run home and make whatever she’s featuring for the day but I usually don’t in order to save my waistline. But then she posted this pizza recipe. And there was no chance. I just had to have it.
We actually used leftover chicken and paired that with sweet, succulent peach slices that were perfectly ripe and bright basil that left a lingering fragrance after you cut them into strips of confetti to be thrown on the pizza before and after baking. There’s no sauce on this pizza…just a whisper of garlic and a swirl of olive oil that I brushed over the naked crust. Then top with the shredded chicken, peach slices and the sweetest, most perfect caramelized onions I’ve ever made. Don’t forget the cheese – that’s what makes it a pizza in my book.
