Bowl of Summer

If you think rice is boring, you’re so wrong.  Fresh tomatoes bursting with flavor and tender, home grown squash are paired with vibrant basil for a bowl of summer goodness.  Edamame adds protein to this meal that’s a perfect way to eat vegetarian once in a while.  And lemon zest.  Oh, lemon zest.  The brightness of the lemon juice and zest made this bowl taste like summer.  It’s amazing how a simple ingredient can add so much flavor.

As we were sitting down to dinner, Big Guy asked “what’s this recipe called?” out of curiosity.  He thought I was being “smart” when I replied with “Summer Veggie Rice Bowl.

Simply delicious summertime veggies like tomatoes and squash (which I used instead of zucchini) paired with nutty rice (I used a wild rice blend) and dressed with a lemon and olive oil dressing that will make you fall in love with lemons.  Topped off with Parmesan shavings that add another hint of nuttiness plus a salty bite.
