We ended up following our plan and making the Jalapeno Popper Pizza last night! The recipe is inspired by a recipe over at Closet Cooking. I love all things related to jalapeno poppers and knew that this pizza would be awesome. I made a few changes based off of what I had at home but it turned out fantastic. I used gluten-free crusts (pre-bought) and instead of bacon, I used the smoked bacon cheese that I needed to use up.
Big Guy missed BQ so we threw the pizzas on the grill. They took no time at all to cook. On one pizza I used jalapenos from the garden and on the other pizza I used pickled jalapeno slices (I wanted to see the difference). Both were scrumptious!
I love how this particular brand of crust (Rudi’s, I think – bought it at Whole Foods) really crisped up. I love thin crust – but it was substantial enough to hold lots of toppings.
After a wonderful weekend, this dinner came together in a flash and was a perfect ending to a Sunday.
