Smokey’s felt left out these past couple of months. He sees BQ getting so much attention and he just feels unloved. I knew that since we had all day at home on Sunday, we needed to make Smokey feel part of the family. Cajun-Spiced Smoked Shrimp! Lots of spices went into the mix! And they were awesome. Smokey and spicy.
I prepared a remoulade to accompany the shrimp. It is mayo-based, but the addition of green onions, celery, ketchup, relish, lemon juice, mustard, horseradish, Worcestershire sauce and garlic made it not so mayo-y. I left out the capers (replaced with dill relish) and I didn’t bother with the cooked eggs. It was a perfect pairing for the smoked shrimp.
On the side, Lemon-Herb Potato Salad. Light, fresh and no mayo in sight!
Big Guy’s happy because he got to hang out with Smokey (in the rain), Smokey’s happy because BQ didn’t get any attention on Sunday and I’m happy because I got to eat.
