Back Deckin’ It

Come Friday afternoon/evening, my favorite place in the world is my back deck with Big Guy and a cold drink.  And that’s just where you could have found me last Friday evening.  After a long, long week, just enjoying the sunshine and Big Guy’s company left me smiling all night long.

I knew I wanted a cheesy appetizer but I wasn’t sure what type of cheese.  After browsing lots and lots of recipes, I improvised.  You only need three ingredients!  Goat cheese, sun-dried tomatoes packed in oil and fresh basil.  How easy is that?  Preheat the oven to 400 degrees.  Slice the goat cheese into 1/2 inch slices into an oven-safe dish.  Layer in a few slices of sun-dried tomatoes and back for about 15 minutes.  I ended up turning it to broil for about 2 more minutes.  Sprinkle with basil and serve with bagel chips (Glutino has amazing GF bagel chips, by the way – and pretzels).

The creamy, tangy goat cheese paired with the sweet sun dried tomatoes and fresh basil confetti was perfection served with crunchy bagel chips.

Once the sun began to set, we got to work on dinner.  Beef Tenderloin Steaks with Balsamic Brussels and Onions.

Perfect appetizer, perfect dinner, perfect Friday evening.

  1. I believe I will be making that app this week. Our Basil has revived itself and everything else is in the fridge and begging to be used!
