Bursting Blueberries

I like to be in the kitchen.  But you can only cook so many things in one day.  So sometimes I bake.  Usually on Sundays.  This Sunday, despite traveling, was no exception.  Limelight Blueberry Muffins.

The lime zest adds a smidge of tartness while the blueberries on top are literally bursting with sweetness.  No mixer needed!

I did not have any sour cream or yogurt on hand, so I simply used plain non-fat Greek yogurt in place of both.  And I’ve never seen a recipe where the blueberries aren’t folded into the batter.  Instead, the batter was poured into the muffin tin and then the blueberries were scattered on top.  This paved the way for bursting blueberries in the hot oven.

Baked to perfection, they still remain super soft and moist from the Greek yogurt.

Perfect for breakfast, brunch or a snack.
