Big Guy’s been sick. Sick, as in, he hasn’t been to the doctor in over 4 years and he went to urgent care on Tuesday and cancelled his flight to Austin. He’s sick. And I think he think he deserves an award. ”The doctor says I have the highest flu count she’s ever seen. Aren’t you proud?” I’m de-germing the house today. I’m also forcing him next October to get his flu shot no matter how many times he says “I don’t get sick.”
But I do feel bad for him. Fever, chills, aches and a pitiful sound to his voice. So I made him dinner. And then I made him eat far, far away from me and my bowl of berries (plus beans, spinach, onions and goat cheese).
Iowa Girl Eats strikes again! The original recipe was “Spinach and Chicken Stir-Fry with Raspberries.” Instead of chicken, I used white beans (obviously did not cook them as long as chicken – simply added them in before the spinach so they were warmed through). I also used a blackberry vinaigrette instead of a raspberry vinaigrette. Annnnd, instead of raspberries I used strawbs because we had some fresh ones that needed to be used. All of this was nestled on top of a bed of quinoa (keen-whaa, that’s for Big Guy – he can’t quite say it correctly).
Seriously delicious. I love sauteed spinach. And white beans take on the flavor of the sauce. The strawberries were bursting with Spring flavor and paired perfectly with the quinoa. And goat cheese, oh honey goat cheese, I want you all to myself.
Off to fumigate the house!


I made that meal the other day and LOVED it! I had frozen raspberries on hand, so I used those, but I think I’ll use fresh next time. (Too mushy.) I’ve made a few of her quinoa recipes and every single one of them have turned out delicious.
