I try and eat something bright and colorful with every meal. That didn’t happen Friday night. I wanted to make a fabulous “date night” dinner since we won’t be having a lot of date nights between now and Christmas. Life just gets in the way.
Date night started with a round of cocktails…apple cider all the way from Charlottesville, VA (compliments of a gym buddy).
Apple cider spiked with spiced rum.
For an appetizer, our favorite: goat cheese stuffed dates wrapped in bacon. I don’t think we’ll ever stop loving those little nuggets.
And for dinner, steaks. And Truffled Pommes Anna. Say what? Basically, crispy potato pancake. I decided not to splurge and didn’t use truffle oil – instead I used garlic olive oil. So we had Garlic Pommes Anna. And it was to-die-for.
I recommend using a mandoline to make sure the potato slices are the same size. And my pictures don’t give the final product justice.
I’ve mentioned I love the crispy edges on baked pasta dishes. Well, I also love everything about crispy potatoes.
Brown but delicious. (I prepared for this brown plate by eating a plethora of veggies at lunch.) I want more of that Pommes Anna. Like now.
Oh, crispy edges, you make me swoon.
Today (and every day) I’m thankful for date nights.
