I’m going to be honest, Halloween isn’t my favorite holiday. (People that claim they like Halloween better than Christmas are lying.) But I do love carving pumpkins with Big Guy and I’m hoping to see lots of cute trick-or-treaters this year (as opposed to the lonely Halloween we had last year).
And the final products…
A friendly ghost, a deer and a creepy spider.
While we were carving pumpkins, a sweet treat was baking away. Pumpkin Crunch Cake. Oh my, it smelled delicious.
Simply mix together the pumpkin, milk, eggs, sugar and spices. Pour into the prepared pan. Sprinkle the cake mix over top (I used about 1/2 the box), then the pecans and finally drizzle the melted butter on top. Bake at 350 degrees for about 65 minutes.
Not very pretty but Big Guy approved. Enjoy cold or at room temperature.
For dinner: Black Bean Mexican Pizza I used the leftover pizza crust from last weekend and this pizza was ready in a flash! Super colorful and super delicious.
The black bean “pizza sauce” was really good! And this recipe is vegetarian.
On top of the “sauce” – red onion, red bell pepper, corn, jalapeno, shredded cheese and cilantro.
Served with a dollop of Greek yogurt on top.

Halloween isn’t my favorite either…except for when I’m teaching. The kids love it and that makes it more fun.
I do like pumpkin. And I like cake.
In dire need of that pizza.
Pizza is always necessary. =)
