Usually on Monday or Tuesday I have a ribeye to show you. Along with a healthy side to make up for the deliciously-fatty piece of meet. Not this week. Big Guy wasn’t getting home until late on Friday and I wasn’t about to depend on his plane getting in at the right time. So I prepared something that didn’t require a grill. Or me buying the steaks. ;)
This main dish only required 4 ingredients. That’s right, 4. Honey Dijon Pork Loin with Apricot.
Simply mix together 1/4 cup each of the honey, preserves and mustard.
Marinate the pork in about 1/3 of the mixture for at least 30 minutes (mine hung out a little longer). Preheat the oven to 350 degrees and bake for about 40 minutes. Let the pork rest for 10 minutes before cutting. Cut into thin slices and serve with the reserved sauce (I let it come to room temperature).
On the side, Peppery Bacon Green Beans. I figured if I wasn’t serving ribeye, Big Guy deserved a little bacon. I used chopped white onion instead of shallot.
Very different from our usual Friday nights. But still delicious.
And I don’t think we’ll be having “the usual” for a while. October is just down-right caaaaarazy.
