The only good thing about this upcoming week is that it’s only a 4-day work week. But the past 3 days were so.much.fun. In fact, can we do it over again?
Not only was it Taylor and Momma’s birthday but I got to meet Watermelon Seed for the first time.
Yep, I’m going to be an Auntie.
What more could you ask for in a Memorial weekend? We had fun, sun, delicious food and refreshing drinks. I like.
About the food…Smokey joined us.
I think Smokey liked the view.
Smoke! Big Guy smoked three pork shoulders for dinner Saturday night…they did NOT disappoint. Absolutely delicious. Along with the pork, lots.of.sides. I personally made a southwestern baked corn casserole that was out of control delicious. And I also made some pina colada cupcakes for dessert.
My plate: pulled pork (Big Guy “did good”), vegggggies, Mawmaw’s coleslaw and southwestern pulled corn. You must try the corn. It’s like the healthiest creamed corn ever but it doesn’t taste healthy.
The cupcakes are the easiest thing ever. And there’s no butter or oil! I only heard good reviews about them – incredibly moist and pineappley.
I’m ready for another long weekend at OIB…

Also, I was watching Man v. Food over the weekend (of course), and when he went to Pappy’s Smokehouse in St. Louis during Season One, he’s talking to one of the grillmasters, and he says, “You’re not really a true redneck until you name your smoker.”
